Blondies are the vanilla-and-brown-sugar cousin of brownies. Browning the butter first adds a toasty, nutty depth that makes them taste like butterscotch.
How to brown butter
Melt the butter in a light-colored pan over medium heat and keep swirling. It will foam, then go quiet, and small golden-brown specks will appear on the bottom with a nutty smell, 5 to 8 minutes. Pour it into a bowl straight away so it does not burn.

Method
Brown the butter in a saucepan over medium heat, 5 to 8 minutes, then pour it into a large bowl and cool for 10 minutes.
Heat the oven to 350°F and line an 8x8-inch pan with parchment.
Whisk the brown sugar into the butter, then the egg, vanilla and salt, until smooth and glossy.
Stir in the baking powder and flour just until combined, then fold in the chips.
Spread in the pan and bake for 22 to 26 minutes, until golden at the edges and just set in the center.
Cool completely in the pan before slicing. Sprinkle with flaky salt while warm, if you like.
