Jams & Fruit Spreads: common questions

Is refrigerator jam shelf-stable?

No. Refrigerator and freezer jams must be kept cold. Only jams made with a tested canning recipe and process are shelf-stable.

Can I make jam with frozen fruit?

Yes. Frozen berries work well in refrigerator and freezer spreads; thaw them in the refrigerator and use their juice too. Freezing does not sanitize fruit, so handle it like fresh fruit.
