How to Cook Burgers on the Stove, in the Oven or in the Air Fryer

Shaping, seasoning and timing for juicy burgers with whatever equipment you have, plus a simple burger seasoning.

A good burger does not need a grill. It needs a well-shaped patty, enough heat and a thermometer.

Shape the patties

  • Use 80/20 ground beef, about 1/3 pound (150 g) per burger.
  • Form patties about 3/4 inch thick and slightly wider than your buns; they shrink as they cook.
  • Press a shallow dimple into the center with your thumb so the burger stays flat instead of doming.
  • Season the outside just before cooking. Salt mixed into the beef early makes it dense and sausage-like.

Times vary with thickness and starting temperature. The only reliable test is temperature: 160°F for ground beef and 165°F for ground turkey or chicken.

Don't press the patty

Pressing a thick burger with a spatula squeezes out the juices. The exception is a smash burger, which is pressed once, right at the start.

Homemade burger seasoning

Enough for 2 pounds of beef: 2 teaspoons kosher salt, 1 teaspoon black pepper, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon smoked paprika and 1/2 teaspoon brown sugar (optional). Store the mix in a jar for up to 6 months.
