6 Homemade Chicken Wing Sauces
Crispy baked or air-fried wings, then buffalo, honey garlic, garlic Parmesan, lemon pepper, sweet chili and gochujang glaze.
Crispy wings without a fryer
Oven: pat 2 pounds of wings very dry, toss with 1 tablespoon baking powder (not baking soda) and 1 teaspoon salt, and bake on a rack over a sheet pan at 425°F for 45 to 50 minutes, flipping halfway.
Air fryer: cook at 380°F for 20 to 22 minutes, shaking the basket twice, then at 400°F for 3 to 5 minutes to crisp.
Wings are safe at 165°F, but they are more tender at 175°F to 185°F because the connective tissue softens. Toss the hot wings in sauce just before serving. Each sauce below coats about 2 pounds.
Classic buffalo
- 1/2 cup cayenne pepper hot sauce
- 4 tablespoons butter, melted
- 1 teaspoon Worcestershire sauce
- 1/4 teaspoon garlic powder
Whisk the hot sauce into the melted butter until smooth.
Good with: Blue cheese dressing and celery
Honey garlic
- 1/3 cup honey
- 3 tablespoons soy sauce
- 3 garlic cloves, minced
- 1 tablespoon butter
- 1 teaspoon rice vinegar
Simmer for 3 to 4 minutes until slightly syrupy.
Good with: Sesame seeds and green onions
Garlic Parmesan
- 4 tablespoons butter
- 3 garlic cloves, minced
- 1/3 cup finely grated Parmesan
- 1 tablespoon chopped parsley
- 1/4 teaspoon black pepper
Cook the garlic in the butter for 1 minute, toss with the wings, then add the Parmesan and parsley.
Good with: Ranch dressing
Lemon pepper
- 4 tablespoons butter, melted
- 2 teaspoons lemon zest
- 1 tablespoon lemon juice
- 1 1/2 teaspoons coarse black pepper
- 1/2 teaspoon salt
Whisk together and toss.
Good with: Fries and extra lemon wedges
Sweet chili
- 1/2 cup sweet chili sauce
- 1 tablespoon lime juice
- 1 teaspoon soy sauce
- 1 teaspoon grated ginger
Stir together and toss.
Good with: Cucumber salad, jasmine rice
Gochujang glaze
- 2 tablespoons gochujang
- 2 tablespoons honey
- 1 tablespoon soy sauce
- 1 garlic clove, grated
- 1 teaspoon sesame oil
Warm gently until smooth and toss. Very spicy brands vary; start with less gochujang.
Good with: Rice, pickled radish
