Baking the subs open-faced melts the cheese and crisps the bread without steaming the lettuce. The cold toppings go on after.

The quick Italian dressing

Three tablespoons of olive oil, a tablespoon of red wine vinegar, oregano and a grated garlic clove. It is what makes the sandwich taste like it came from a deli.

Method

  1. Heat the oven to 400°F. Open the rolls on a baking sheet.

  2. Layer the salami, ham and pepperoni on one side of each roll and the provolone on both sides.

  3. Bake for 8 to 10 minutes, until the cheese melts and the edges of the bread crisp.

  4. Whisk the oil, vinegar, oregano, garlic, salt and pepper.

  5. Top the hot subs with lettuce, tomato, onion and peppers, drizzle with the dressing and close.
