Turkey burgers work best when the toppings help with moisture and the cooking follows a thermometer rather than a fixed number of minutes. Grated onion goes into the patty; a simple yogurt sauce and sliced avocado go on afterward. It is a modest ingredient list with several different textures.

Set yourself up for a better patty
Choose ground turkey labeled about 93% lean if available. Very lean breast-only blends behave differently and can become dry more quickly. Squeeze just the excess liquid from the grated onion, leaving it moist rather than wringing it dry.
Use plain breadcrumbs as written. They help bind the mixture, but adding extra handfuls can produce a firm, bready result. Mix gently, divide evenly, and cook patties of consistent thickness. Keep the yogurt sauce separate from utensils that have touched raw poultry.

Taste the sauce before handling the raw meat. Add lime gradually if your yogurt is already tangy. This is an ordinary cooked burger, so topping substitutions are flexible; the poultry temperature is not.
Troubleshooting
The mixture feels soft. Form it with lightly dampened hands and use a spatula to move patties. Do not keep adding breadcrumbs just to make it resemble beef.
The outside is browning too quickly. Reduce the burner and continue until the center reaches 165°F. A dark crust is not evidence that the middle is cooked.

Storage and reheating
Refrigerate perishable leftovers in shallow covered containers within 2 hours, or 1 hour if the temperature is above 90°F. Keep the refrigerator at 40°F or below. Method
Combine yogurt and lime juice in a small bowl. Cover and refrigerate while you make the burgers.
Gently mix turkey, breadcrumbs, onion, garlic powder, salt and pepper. Divide into four patties about 1/2 inch thick. Wash hands and clean surfaces after handling raw poultry.
Warm oil in a heavy skillet over medium heat. Add patties without crowding; cook in batches if needed.
Cook until browned, roughly 5–6 minutes on the first side, then flip carefully. Continue until each center reaches 165°F on a thermometer inserted from the side. Reduce heat if the crust darkens too quickly.
Transfer to a clean plate. Spread yogurt sauce on buns and add lettuce, turkey and avocado. Serve promptly.
