Baking: common questions

Why are my cookies flat?

Usually butter that is too warm, too little flour, a warm baking sheet or an oven running cool. Chilling the dough for 30 minutes helps most recipes.

Should I chill cookie dough?

For most drop cookies, yes. Cold dough spreads less and the flavor deepens. Thirty minutes is enough to make a difference.

How do I know when banana bread is done?

A toothpick in the center comes out clean or with a few moist crumbs, and the center reads about 200°F.

Can I freeze quick breads?

Yes. Wrap the cooled loaf well and freeze for up to 3 months. Individual slices thaw in about 30 minutes.
