BBQ chicken pizza is the easiest way we know to turn half a rotisserie chicken into dinner. Tossing the chicken in a little sauce before it goes on keeps it juicy in a hot oven.

Make it your own

Use your favorite bottled barbecue sauce or one of our homemade BBQ sauces. A little smoked gouda or smoked cheddar with the mozzarella makes a noticeable difference.

Method

  1. Heat the oven with a pizza steel, stone or upside-down sheet pan inside to 500°F for at least 30 minutes.

  2. Toss the chicken with 2 tablespoons of the barbecue sauce.

  3. Stretch the dough into a 12-inch round on parchment. Spread the remaining sauce over the dough, then add the cheeses, chicken and red onion.

  4. Bake for 11 to 13 minutes, until the crust is golden and the cheese is bubbling.

  5. Scatter with cilantro and slice.

Yes. Always start with fully cooked chicken; the pizza bakes too quickly to cook raw chicken safely.
