Hot honey turns an ordinary pepperoni pizza into something people ask about. You can buy it, but warming honey with red pepper flakes takes two minutes, and you control the heat.

Keep the heat adjustable

Drizzle the hot honey at the table rather than before baking. That way the children can have plain pepperoni and the adults can add as much as they like.

Method

  1. Heat the oven with a pizza steel, stone or upside-down sheet pan inside to 500°F for at least 30 minutes.

  2. Make the hot honey: warm the honey and red pepper flakes in a small saucepan over low heat, or in the microwave for 15 to 20 seconds. Stir in the vinegar and let it steep while the pizza bakes.

  3. Stretch the dough into a 12-inch round on parchment. Spread the sauce, leaving a border, then add the mozzarella, Parmesan and pepperoni.

  4. Bake for 11 to 13 minutes, until the crust is golden and the pepperoni edges have curled and crisped.

  5. Drizzle with hot honey, starting with a little, and serve the rest at the table.

How do I make hot honey at home?

Warm 3 tablespoons of honey with 1/2 to 1 teaspoon of red pepper flakes for 15 to 20 seconds in the microwave, then let it steep. A splash of vinegar balances the sweetness.

Why does my pepperoni pool with grease?

Pepperoni releases fat as it crisps. Thinner, cup-style pepperoni curls and crisps more; blot the finished pizza with a paper towel if you prefer.
