When the weather turns, soup is the dinner that asks the least of you. One pot, one spoon to stir with, and a pan of something crusty on the side. These eight recipes use ordinary groceries and are built to be forgiving, so a little more broth or a different vegetable will not hurt them.

Before you start

  • Start with onion, carrot and celery. Cooking them in a little oil for 5 minutes gives almost any soup a deeper flavor than adding them straight to the broth.
  • Taste at the end. Broth varies a lot in saltiness, so add salt and a squeeze of lemon or splash of vinegar after the soup has simmered.
  • Cook pasta separately if you want leftovers. Noodles keep absorbing broth in the fridge, so for a soup you will reheat, add pasta to each bowl instead.
  • Cool and store soup within 2 hours. Refrigerate it in shallow containers and eat it within 3 to 4 days, reheating to 165°F. Our leftovers guide has the full list.

Most of these soups freeze well; see how to freeze and reheat dinners and freezer meals to keep ready. Want hands-off versions? Try the slow cooker dinners, and pick the night with the weekly meal planner.

Questions, answered

What is the easiest soup to make for dinner?

Chicken noodle soup made with store-bought broth and rotisserie chicken is ready in about 20 minutes. Creamy tomato soup from a can of crushed tomatoes is just as simple.

How long does homemade soup last in the fridge?

Refrigerate soup within 2 hours of cooking and eat it within 3 to 4 days, reheating it until steaming hot, to 165°F. For longer storage, freeze it in portions.

Can I freeze soup with pasta or potatoes in it?

You can, but pasta turns soft and potatoes can go grainy. For best results freeze the soup base on its own and add fresh pasta when you reheat it.
