8 Easy Dinners to Make With Leftover Taco Meat
Taco night left you with a cup or two of seasoned beef? Turn it into nachos, quesadillas, stuffed peppers and more, most in 30 minutes or less.
The short answer
Leftover taco meat is already seasoned and cooked, so it works anywhere you would use a savory filling: nachos, quesadillas, baked potatoes, stuffed peppers, rice skillets or pasta. Reheat it to 165°F, and use it within 3 to 4 days of the first meal.
Taco night rarely ends with exactly the right amount of meat. A cup or two of seasoned beef in the fridge is a head start on tomorrow's dinner, because the hard part (browning and seasoning) is done. Think of it as a ready-made filling and pair it with something that makes it a different meal: potatoes, rice, pasta, tortillas or eggs.
Store and reheat it safely
- Refrigerate within 2 hours of cooking (1 hour if the room is above 90°F). Use a shallow covered container so it cools quickly.
- Use it within 3 to 4 days. If you will not get to it, freeze it. Our freezer dinner guide covers freezing and reheating.
- Reheat to 165°F all the way through, with a splash of water or broth so it does not dry out.
- Check how long leftovers last when you are unsure about a specific food.
Quick ways to use it up
Each idea below is built around about 1 to 2 cups of cooked taco meat. Start with a plain base such as rice or potatoes, and add a taco-night sauce to change the flavor. Cooking a fresh batch? See what to make with ground beef for more ideas, or use the dinner decider to choose for you.
