Chewy Oatmeal Chocolate Chip Cookies

Thick, chewy oat cookies with brown sugar, a hint of cinnamon and chocolate chips (or raisins, if that is your family).

Old-fashioned rolled oats give these cookies their hearty chew. Quick oats work, but the cookies will be softer and less textured.

Chips or raisins?

Use the same 1 1/2 cups of either. If you use raisins, soak them in hot water for 10 minutes and pat them dry so they stay plump.

Method

  1. Whisk the flour, baking soda, cinnamon and salt.

  2. Beat the butter and both sugars until creamy, about 2 minutes. Beat in the eggs and vanilla.

  3. Mix in the flour mixture on low, then stir in the oats and chocolate chips.

  4. Chill for 30 minutes. Heat the oven to 350°F and line baking sheets with parchment.

  5. Scoop 2-tablespoon mounds 2 inches apart and bake for 10 to 12 minutes, until golden at the edges but soft in the center.

  6. Cool on the sheet for 5 minutes before moving to a rack.
