No tomato sauce here. A quick garlic ricotta spread gives the pizza a creamy base without making a white sauce on the stove.
A note on spinach
Raw spinach wilts in the oven, but a big pile releases water. Chop it roughly and use about a cupful, or squeeze thawed frozen spinach very dry.

Method
Heat the oven with a pizza steel, stone or upside-down sheet pan inside to 500°F for at least 30 minutes.
Stir the ricotta, garlic, olive oil, salt and pepper together.
Stretch the dough into a 12-inch round on parchment. Spread the garlic ricotta over it, leaving a border.
Top with the mozzarella, chicken, spinach and red onion, then sprinkle with Parmesan.
Bake for 10 to 12 minutes, until the crust is deep golden and the cheese is browning in spots.
