Baked potatoes become dinner when they are stuffed with something hearty. Cream cheese keeps the buffalo chicken rich and tames the heat, so even people who do not love spicy food usually go back for more.
The microwave shortcut
Fully oven-baked potatoes take about an hour. Starting them in the microwave cuts that in half, and a short finish in a hot oven brings back the crisp skin.

Microwave the potatoes on high for 8 to 12 minutes, turning once, until a knife slides in easily.
Heat the oven to 425°F. Rub the potatoes with oil and salt and bake directly on the rack for 10 minutes to crisp the skins.
Meanwhile, mix the chicken, hot sauce, butter and cream cheese.
Split the potatoes, fluff the insides with a fork and spoon in the chicken mixture. Top with cheese.
Bake for 8 to 10 minutes, until the cheese melts and the filling is hot (165°F). Finish with green onions and a drizzle of dressing.
