Sun-dried tomatoes do the heavy lifting in this pasta: they are sweet, tangy and concentrated, and the oil they are packed in is full of flavor. Use a spoonful of it to sear the chicken.
Before draining, scoop out a mugful of the starchy cooking water. A splash of it turns butter, cheese or cream into a silky sauce that clings to the pasta.

Method
Cook the pasta in salted boiling water until al dente. Reserve 1 cup of pasta water and drain.
Season the chicken with Italian seasoning, salt and pepper. Sear in the oil in a large skillet over medium-high heat for 4 to 5 minutes per side, until 165°F. Rest on a board, then slice.
Lower the heat to medium. Add the garlic and sun-dried tomatoes to the pan and stir for 1 minute.
Add the broth, scraping up the browned bits, and simmer for 3 minutes. Stir in the cream and Parmesan and simmer until slightly thickened, 3 minutes.
Add the spinach and stir until wilted. Toss in the pasta and sliced chicken, loosening with pasta water as needed.
