This is the dinner for the nights when everyone is tired and someone is picky. It is also a good side for garlic butter chicken bites or lemon herb chicken.
Before draining, scoop out a mugful of the starchy cooking water. A splash of it turns butter, cheese or cream into a silky sauce that clings to the pasta.

Method
Cook the pasta in well-salted boiling water until just tender. Reserve 1 cup of the cooking water, then drain.
In the same pot, melt the butter over medium-low heat. Add the garlic and red pepper flakes and cook for 1 minute, until fragrant but not browned.
Add the pasta and 1/2 cup of the pasta water and toss. Take the pot off the heat and add the Parmesan a handful at a time, tossing until glossy. Add more water if it looks dry.
Season with pepper, toss with parsley and top with toasted panko if you like.
