How to Get Crispy Pizza Crust at Home
Preheat properly, use less sauce, go easy on wet toppings and bake on the hottest surface you have.

A home oven cannot match a pizzeria's, but it can get much closer than most people expect. Crispness comes down to heat underneath the crust and moisture on top of it.
1. Preheat longer than feels necessary
The oven light goes off long before the oven walls and baking surface are hot. Heat the oven to its highest setting, usually 500°F to 550°F, for 30 to 45 minutes with the baking surface inside.
2. Bake on something heavy
| Surface | How it performs | Notes |
|---|---|---|
| Pizza steel | Crispest, fastest bottom | Heavy; lower-middle rack |
| Pizza stone | Very good | Preheat longer; never add cold water |
| Upside-down sheet pan | Good, and free | Preheat it with the oven |
| Cast-iron skillet | Excellent for pan pizza | Oil the pan generously |
3. Use less sauce and fewer wet toppings
About 1/2 cup of sauce covers a 12-inch pizza. Fresh mozzarella, mushrooms, spinach and peppers all release water: pat cheese dry and cook watery vegetables first. The pizza topping formula keeps the load sensible.
4. Stretch evenly
A thick center stays doughy while the rim burns. Stretch from the middle outward and leave only the rim a little thicker.
5. Finish under the broiler, if needed
If the bottom is done but the top is pale, move the pizza to the upper rack and broil for 1 to 2 minutes. Watch it closely.
Reheating leftovers so they stay crisp
- Skillet: medium heat, covered, for 5 to 6 minutes. The lid melts the cheese while the pan re-crisps the base.
- Air fryer: 350°F for 3 to 4 minutes.
- Oven: 400°F on a preheated sheet pan for 6 to 8 minutes.
Avoid the microwave if you can: steam softens the crust.
Questions, answered
How do I make pizza crust crispy on the bottom in the oven?
