Ground turkey is lean, affordable and fast, but it can taste flat and turn dry. A few habits fix both.

How to make ground turkey taste better

  • Brown it well in a hot pan and leave it alone for a few minutes so it gets color.
  • Season boldly: salt, garlic, onion, smoked paprika, cumin or soy sauce.
  • Add moisture: a little grated onion, sauce or broth keeps it tender.
  • Cook it to 165°F, the safe temperature for all ground poultry, and no further.
  1. Turkey taco rice bowls

    • 1 pound ground turkey
    • 2 tablespoons taco seasoning
    • 3 cups cooked rice
    • 1 (15-ounce) can black beans
    • Salsa and cheese

Brown the turkey with the seasoning and a splash of water, then build bowls.

  2. Asian-style lettuce wraps

    • 1 pound ground turkey
    • 1 (8-ounce) can water chestnuts, chopped
    • 3 tablespoons hoisin sauce
    • 1 tablespoon soy sauce
    • 1 head butter lettuce

Brown the turkey, add the water chestnuts and sauces and spoon into lettuce cups.

  3. Baked turkey meatballs

    • 1 1/2 pounds ground turkey
    • 3/4 cup breadcrumbs
    • 1 egg

Roll, bake at 400°F for 18 to 20 minutes to 165°F and simmer in marinara.

  4. Turkey chili

    • 1 pound ground turkey
    • 2 (15-ounce) cans beans
    • 1 (28-ounce) can crushed tomatoes
    • 1 onion
    • 2 tablespoons chili powder

Brown the turkey and onion, add the rest and simmer 25 minutes.

  5. Turkey burgers

    • 1 1/4 pounds ground turkey
    • 1/4 cup grated onion
    • 1 tablespoon Worcestershire sauce

Questions, answered

What temperature should ground turkey be cooked to?

165°F, measured with a thermometer, like all ground poultry.

Can I use ground turkey instead of ground beef?

Yes, in almost any recipe. Because it is leaner, add a little oil to the pan, season it a bit more and cook it to 165°F.
