Fajitas are a natural build-your-own dinner: put the pan and toppings on the table and let everyone make their own. The homemade seasoning lets you keep the heat mild for kids and pass hot sauce to everyone else.
Homemade fajita seasoning
2 teaspoons chili powder, 1 teaspoon ground cumin, 1 teaspoon smoked paprika, 1 teaspoon garlic powder, 1 teaspoon salt and 1/2 teaspoon dried oregano. Most chili powder blends are mild; add cayenne for heat.

Method
Heat the oven to 425°F. Mix the spices in a small bowl.
Toss the chicken, peppers and onion with the oil and spice mix. Spread in a single layer on a large sheet pan, or two pans if crowded.
Roast for 20 to 25 minutes, stirring halfway, until the vegetables are tender and the chicken reaches 165°F.
For charred edges, broil for 2 minutes at the end.
Squeeze lime over the pan and serve with warm tortillas and toppings.
