8 Thanksgiving Leftover Recipes That Feel Like a New Dinner
Turkey pot pie, stuffing waffles, leftover sandwiches, soup and more, plus how to store and reheat Thanksgiving leftovers safely.
The short answer
Thanksgiving leftovers turn into turkey pot pie, turkey noodle soup, stuffing waffles, potato cakes and a good sandwich. Refrigerate them within 2 hours of serving and eat them within 3 to 4 days. Reheat everything to 165°F before it goes back on the table.
The turkey is cooked, the sides are made and nobody wants the same plate again on Friday. The trick is to change the shape of the food: put it in a pie, a soup, a waffle iron or a sandwich, and it feels like a fresh dinner.
Store it safely first
Refrigerate leftovers within 2 hours of serving (within 1 hour if the room is above 90°F). Slice the turkey off the bone and pack it, the stuffing and the gravy into shallow, covered containers so they cool quickly. Eat everything within 3 to 4 days, and reheat it to 165°F. If you are not sure what day something went in, check the leftovers timing tool.
Tips that make leftovers better
- Add moisture. Turkey dries out when reheated. A splash of broth or gravy brings it back.
- Chop and mix. Dark and white meat together taste richer than white meat alone.
- Use the gravy. It is the fastest sauce you have for pot pie, sandwiches and skillet dinners.
- Mix and match. Not sure what you have? Type it into the What Can I Make tool.
