Agua fresca means "fresh water" in Spanish: blended fruit, water and a touch of sugar, poured over ice. Watermelon is the classic, and a sweet melon may need no sugar at all.

Freshly squeezed and blended juices are not pasteurized. The FDA advises children, pregnant people, older adults and anyone with a weakened immune system to drink pasteurized juice instead. Wash produce under running water before cutting, keep fresh juice cold and drink it within a day.

Method

  1. Wash the whole melon under running water before cutting, then cube it.

  2. Blend the watermelon, water, lime juice and salt until smooth.

  3. Taste and sweeten only if needed. Strain through a sieve for a clear drink, or leave it as is.

  4. Serve over ice with mint.
