The useful trick in this bowl is preparing the broccoli in small, even florets. It cooks quickly beside the pasta and spreads through the dish instead of leaving large pieces at the bottom. Lemon zest provides aroma, while a little juice brightens the finish.

Prep before you drain

Cut florets into roughly 1-inch pieces. Peel a thick broccoli stem and slice its tender interior thinly if you want to include it. Wash the lemon before zesting, and take only the colored peel: the thick white layer underneath can taste bitter.

Have a mug ready for pasta water. The starch-rich water, oil and cheese form a light coating when tossed; this is not a thick cream sauce. Finely grated Parmesan disperses more easily than large shreds.

Common questions

Why did the cheese clump? High heat and too little water can make a light cheese coating difficult to combine. Use finely grated cheese, move the pot off strong heat, and add it gradually while tossing.

Can it be made ahead? It is best textured just after cooking. For a later meal, store safely and add a small splash of water while reheating; the broccoli will be softer.

Can I skip the zest? Yes. Add juice gradually to taste, recognizing that the aroma will be gentler.

Storage and reheating

Refrigerate perishable leftovers in shallow covered containers within 2 hours, or 1 hour if the temperature is above 90°F. Keep the refrigerator at 40°F or below. Method

  1. Bring a large pot of water to a boil. Prepare broccoli, garlic, lemon zest and juice while it heats.

  2. Add pasta and cook according to the package. Add fresh broccoli florets for the final 3–4 minutes, checking for a tender-crisp texture. Reserve 1 cup water, then drain.

  3. In the empty warm pot, heat olive oil over medium-low. Add garlic and stir for about 1 minute until fragrant, avoiding browning.

  4. Return pasta and broccoli. Remove from strong heat and add zest, lemon juice, pepper and salt. Toss with 1/4 cup reserved water.

  5. Add Parmesan gradually while tossing. Loosen with more water only if needed. Taste, adjust lemon or seasoning, and serve.
