A sheet pan dinner is the closest thing to a dinner that makes itself: chop, toss, roast, done. One pan goes in the sink.

Rules for a great sheet pan dinner

  • Do not crowd the pan. Food needs space to roast; crowded food steams and stays pale. Use two pans if you need to.
  • Cut to match cooking times. Potatoes and carrots go in small pieces or get a head start; quick vegetables like peppers and zucchini go in larger pieces or later.
  • Hot oven: 400 to 425°F for browning.
  • Line the pan with parchment or foil for easy cleanup.
  • Cook meat to temperature: chicken to 165°F, pork to 145°F, fish to 145°F.
  1. Sheet pan chicken fajitas

    • 1 1/2 pounds chicken breast, sliced
    • 3 bell peppers
    • 1 onion
    • 2 tablespoons fajita seasoning

Roast at 425°F for 20 minutes and serve in warm tortillas.

    • 12 ounces green beans
    • 2 tablespoons oil
    • Garlic powder and paprika

Roast the potatoes 15 minutes at 425°F, add the sausage and beans and roast 15 to 20 minutes more.

  3. Honey garlic chicken thighs and broccoli

    • 2 pounds boneless chicken thighs
    • 1/4 cup honey
    • 3 tablespoons soy sauce
    • 3 garlic cloves
    • 4 cups broccoli

Roast the glazed thighs at 425°F for 15 minutes, add the broccoli and roast 10 to 12 minutes, to 165°F.

    • 1 pound shelf-stable gnocchi
    • 2 cups cherry tomatoes
    • 1 zucchini

Toss everything (no need to boil the gnocchi) and roast at 425°F for 20 to 25 minutes, stirring once.

  6. Sheet pan nachos

    • 1 bag tortilla chips
    • 2 cups cooked ground beef or beans
    • 3 cups shredded cheese
    • Salsa, sour cream, jalapeños

Layer chips, meat and cheese and bake at 400°F for 8 to 10 minutes until melted.

    • 4 boneless pork chops
    • 2 sweet potatoes, cubed
    • 2 apples, sliced

    • 1 teaspoon thyme

    • 1 head cauliflower
    • 2 carrots
    • 2 teaspoons cumin
    • Yogurt or tahini sauce

Questions, answered

What temperature do you cook sheet pan dinners at?

Most sheet pan dinners roast at 400 to 425°F, hot enough to brown the food before it dries out.

Why are my sheet pan vegetables soggy?

The pan is usually too crowded, so the vegetables steam. Spread them out in a single layer, use two pans and make sure the oven is fully preheated.
