A bowl dinner lets everyone finish their portion differently. Keep the chicken warmly spiced, then offer lime and hot sauce separately. Rice and beans make the base, while avocado and corn bring contrast without needing a second cooked side.

A little preparation pays off

Start the rice first and prepare the toppings before touching raw chicken. Cut chicken into evenly sized pieces so one piece is not done long before another. A wide skillet lets them brown; a small pan may require batches.

Smoked paprika adds flavor without relying on a large amount of cayenne. Begin with the smaller amount of cayenne if your table prefers mild food. Bottled hot sauces vary substantially, so let each person add their own.

Plan tomorrow's lunch

Store cooked rice, chicken and beans promptly in shallow containers, with avocado and lime separate. Rice needs the same prompt refrigeration attention as the rest of the meal. A large bowl left out for hours is not safe merely because it contains no sauce.

Could I use thighs? Boneless thighs work, but their size and cooking time differ. Use the same 165°F minimum internal temperature.

No avocado today? Add cucumber or a little yogurt just before eating. For a pantry-centered alternative, try smoky black bean tacos.

Storage and reheating

Refrigerate perishable leftovers in shallow covered containers within 2 hours, or 1 hour if the temperature is above 90°F. Keep the refrigerator at 40°F or below. Method

  1. Cook rice according to its package. Prepare avocado and lime with clean utensils before handling raw chicken.

  2. Combine paprika, cumin, garlic powder, salt and cayenne. Toss chicken with the seasoning. Wash hands and clean surfaces after raw poultry contact; do not rinse raw chicken.

  3. Heat oil in a large skillet over medium-high. Add chicken in one layer, working in batches if necessary. Cook, turning occasionally, until browned and every checked piece reaches 165°F in its center. Timing is about 8–12 minutes but varies.

  4. Use a separate small saucepan to warm beans and corn with 2 tablespoons water, stirring until hot. Keep cooked components hot until serving.

  5. Divide rice among four bowls. Add beans, corn and chicken, then avocado. Serve with lime and optional hot sauce.
