Spicy Favorites

Big flavor, with heat you control. Most of these recipes build spice in a way you can dial up for the adults and down for the children: sauces served on the side, hot honey drizzled at the table or mild and hot sausage used half and half.

Spicy Favorites: common questions

How do I make a spicy recipe milder?

Use less of the chili ingredient, remove pepper seeds and ribs, and serve hot sauces or hot honey at the table so everyone adds their own.

What helps if a dish turns out too spicy?

Serve it with something creamy or starchy: sour cream, yogurt, cheese, rice or bread. Capsaicin, the compound that makes chilies hot, dissolves in fat, so dairy calms the heat better than water.
